Classico: The flavors of salame classico are characteristic of the north western Italian Alps (Piedmont): buttery with a hint of nuttiness. 

Delicato: Salami Delicato claims its name from the delicacy and soft tones of flavors that are left behind by the herbs that were infused in the wine
overnight. Only the santoreggia (winter savory) is added, bold and fresh, a few hours before stuffing the links which bring a fresh flavor that lies on top of a slightly sweet background.
